Chickpea Stew
This is a vegan and gluten-free soup with fiber and iron.
Ingredients:
- 1 cup boiled chickpeas
- 1 tablespoon olive oil
- 1 medium onion minced
- 2 cloves garlic minced
- 1 medium tomato chopped
- 1 carrot diced
- 1 teaspoon dried parsley
- Half teaspoon oregano
- Half teaspoon oregano
- Salt as per taste
- 1/4th teaspoon cayenne powder
Directions:
Heat the oil and water put onion and let it soften for a while. Add garlic along with the spices, carrot, tomatoes, and chickpeas. Then add salt and cayenne powder and let it simmer for 10 minutes. The soup is now ready to pack.
