Black Bean-Vegetable Tacos
Ingredients –
2 corn tortillas
½ cup steamed black beans
1 small white/red onion, finely chopped
1 small tomato, diced
½ cup zucchini, diced
¼ cup grated feta cheese
¼ green pepper, chopped
1 tsp olive oil
2 tbsp fresh yogurt
2 tbsp minced cilantro
1 tsp lemon juice
Salt to taste
(Serves 1)
Mix together vegetables with olive oil and cook for 5 minutes. Add beans, 1 tbsp cilantro lemon juice, salt, pepper and cheese. Mix salt, 1 tbsp cilantro and yogurt together. Cook tortillas over flame. Add vegetables and beans mixture topped with yogurt.
