Gourmet Chocolate and Carrot Cupcakes
Ingredients
- 1 cup carrots, grated
- 2 eggs
- ½ cup whole wheat flour
- ¼ cup dark chocolate chips
- 10 almonds, chopped
- ¼ cup applesauce
- ¼ cup dates
- ½ cup milk
- 2 tbsp vegetable oil
- 1 ½ tsp baking powder
- 1 cup plain yogurt
- ½ cup cheddar cheese, shredded
- 2 tsp sugar
- ¼ cup assorted chopped nuts

For this carrot dessert recipe, beat eggs in a bowl until frothy. Melt chocolate chips and add it in the eggs along with rest of the ingredients except nuts, yogurt, sugar and cheese. Pour into cupcake moulds and bake for 20 minutes at 300 degrees in an oven preheated for 10 minutes at 350 degrees.
