Oven Baked Salmon
Ingredients require:
- 12 ounce of salmon fillet, (4 pieces after cutting)
- Fresh ground black pepper
- Coarse-grained salt
- For serving, Toasted almond parsley salsa
- For serving, Baked squash, (optional)
For Toasted almond parsley salad
- 1 shallot
- Coarse grain salt
- 1 tablespoon red wine vinegar
- 2 tablespoon capers rinsed
- 2 cup Fresh flat leaf parsley
- 1/2 cup toasted almonds
- Extra Virgin Olive Oil
How to prepare
Season salmon with salt and pepper. Place the salmon, skin side down, on a non-stick pan with an oven-proof handle. Bake until the salmon is cooked through, for 12 to 15 minutes. Mince the shallot, pour some wine vinegar over the shallots and add a pinch of salt. Roughly chop the capers, parsley, and almonds and add it to the shallots. Add the olive oil, and mix again to adjust the seasonings.
