Paleo carrot cake cookies
Ingredients required:
- ½ cup shredded coconut
- 2 cups almond meal
- ½ tsp each baking powder, baking soda, and kosher salt
- 1 tsp cinnamon
- 1 egg
- ¼ cup each of coconut oil and maple syrup
- 1 tsp vanilla essence
- ¾ cup shredded carrots (squeezed)
How to prepare:
Preheat oven to 350 degrees. In a large bowl, mix the coconut, cinnamon, almond meal, baking powder, soda, and salt. In a small bowl, whisk the maple syrup, coconut oil, egg, and vanilla. Mix both mixtures and fold in shredded carrots. Bake for 12 minutes.
