Vegan Sushi Bowl
Ingredients
- ½ cup brown rice
- 1 small cucumber, chopped
- 1 small carrot, chopped
- 1 radish, thinly-sliced
- ½ cup edamame
- ½ cup tofu
- 1 tsp ginger
- 1 nori sheet, shredded
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 4 tbsp soy sauce
- 2 tbsp black sesame seeds
- Salt, to taste
(Serves 2)
Cook rice with salt and vinegar. Gently sauté vegetables, ginger and tofu in sesame oil and then add sesame seeds. Divide the vegetables, edamame, tofu and rice into two bowls. Top with soy sauce.
