Quinoa and Coconut Pancakes
Ingredients –
- ½ cup cooked white quinoa
- 1 cup coconut milk
- 2 tsp desiccated coconut
- 2 tsp bran (or tapioca flour)
- Sugar to taste
- ¼ tsp nutmeg powder
- ¼ cup canned or fresh pineapple
- Fresh cream (optional)
- Coconut oil (any other of your choice) as needed
How to Prepare:
Mix all the ingredients together except pineapple, cream, and oil. Heat a pan with coconut oil. Pour the batter in batches and cook it thoroughly on each side. Top each pancake with pineapple right before serving. Add cream on top for some richness.
