Peanut and Bean Salad
Ingredients –
- ½ cup roasted peanuts
- ½ cup steamed peanuts
- ½ cup steamed kidney beans
- ¼ cup steamed white beans
- 1 small cucumber, peeled and diced
- ½ small white onion, finely-chopped
- ½ small red onion, finely-chopped
- 1 green chili, deseeded and chopped
- ½ zucchini, diced
- ¼ cup orange/pink grapefruit stems, peeled
- 1 tbsp lemon juice
- ½ tbsp ground pepper
- 1 tbsp olive oil
- Salt to taste
(Serves 1)
Mix all ingredients except lemon juice and salt in a salad bowl and chill in the refrigerator for 15 minutes. Add salt and lemon juice right before consumption. This is a healthy peanut recipe that you can even eat in lieu of a full meal.
