Basic French Macaron Recipe
Ingredients –
- 2/3 cup (around 13 tbsp) almond meal
- 1 cup powdered sugar
- ½ tsp stevia5 tbsp granulated sugar
- 3 egg whites
- 1 tsp vanilla extract

For the buttercream –
- 7 tbsp unsalted butter
- 2 egg yolks
- 3 tbsp milk
- ¼ cup granulated sugar
- 1 tsp vanilla extract
For the French macaron recipe, beat egg whites with a stand mixer. Add granulated sugar slowly and mix well. Continue to work on the eggs until the texture is glossy. Add vanilla extract. Sift sugar and almond meal together through a sieve. Fold almond mixture in two batches into the egg whites. Pipe batter onto baking trays lined with parchment paper. Ensure the size is about 1 inch for each circle. Let the cookies stay in the preheated oven at 300 degrees F for 20 minutes. Then bake them for 15-17 minutes. When they have cooled, fill them with butter cream. For the French macaron filling recipe, whisk egg yolk with sugar thoroughly. When done, add milk and mix well. Heat the mixture slowly and cook until it achieves a custard-like consistency. Add softened butter and vanilla to it. It is now ready to be piped.
